Ingredients

Herb-Butter Crust

  • 1 ¼ cups all-purpose flour
  • ½ tsp sea salt
  • ½ tsp dried thyme
  • ½ tsp dried parsley
  • ½ cup cold unsalted butter, cubed
  • 3–4 tbsp ice water

Crab Filling

  • 1 lb jumbo lump crab meat, picked over for shells
  • ½ cup finely diced shallots
  • ¼ cup finely diced celery
  • 1 tbsp unsalted butter
  • 2 tbsp fresh chives, minced
  • 2 tbsp fresh parsley, minced
  • 1 tsp lemon zest
  • 1 tsp Dijon mustard
  • ½ tsp Worcestershire sauce
  • ¾ tsp seafood seasoning (such as Old Bay)
  • ¼ tsp smoked paprika
  • ½ tsp kosher salt (adjust to taste)
  • Fresh cracked black pepper

Custard Binder

  • 2 large eggs
  • ½ cup heavy cream
  • ¼ cup mayonnaise
  • 1 tsp lemon juice
  • 1 tbsp whole-grain mustard

Lemon-Dijon Cream Sauce (Optional)

  • ½ cup crème fraîche
  • 1 tsp Dijon mustard
  • 1 tsp lemon zest
  • Pinch salt

Make the Crust

  1. In a bowl, combine flour, salt, thyme, and parsley.
  2. Cut in cold butter until mixture resembles coarse crumbs.
  3. Add ice water gradually until dough just comes together.
  4. Form into a disk, wrap, and chill 30 minutes.

Roll out and press into a 9-inch tart or pie pan. Chill while preparing filling. (Chill for 30 minutes at minimumP)

Prepare the Filling

  1. Sauté shallots and celery in butter over medium heat until soft (about 3–4 minutes). Cool slightly.
  2. In a large bowl, gently combine crab meat, sautéed vegetables, chives, parsley, lemon zest, Dijon, Worcestershire, seafood seasoning, paprika, salt, and pepper.
    • Be careful not to break up the crab lumps.

Make the Custard

Whisk eggs, cream, mayonnaise, lemon juice, and whole-grain mustard until smooth.

Assemble

  1. Spread crab mixture evenly into chilled crust.
  2. Pour custard evenly over the crab mixture.
  3. Gently press filling to ensure custard settles into crevices.

Bake

Bake at 375°F (190°C) for 45–50 minutes, until golden and just set in the center.
Let rest 10–15 minutes before slicing.

Plate the meal attractively, garnish as desired, and serve it hot.

Optional Sauce

Whisk sauce ingredients together and drizzle lightly over each slice before serving.
